Superbowl Food

Well folks, its that time of year again!

I'm no football watcher, but as I've mentioned I love a chance to get family and friends together. This year, we are in a new house, a new city, and a new state.

To compound on that, my husband also has a new TV and sound bar. (Truthfully, I do not get it. TV is TV)

But, because of his new little set-up he is more than happy to invite his buddies over for a little Superbowl Party, and I am more than happy to test out some healthy versions of my favorite foods on them!

As with my other recipes, these are not necessarily all perfectly healthy. But, again --> we are looking to make improvements and these are certainly better than just ordering carry out wings and pizza!

Buffalo Wings

I. LOVE. WINGS. I love them, I love them, I love them.  But, fried chicken isn't really that great of a choice, is it? So - try a baked version instead! The key to making these is making sure that they are DRY before you bake them, so that the outsides get crispy! 

2 lbs frozen chicken wings 
2 Tbsp. butter
4 Tbsp. Buffalo Sauce (search for one with low sodium, or with as few ingredients as possible!) 

Preheat oven to 425.
Place chicken wings in a microwave safe bowl 
Fill up with water, about  halfway. 
For thawed wings, microwave 5 minutes, stir and microwave 5 more minutes. 
For frozen, microwave 10 minutes, stir, and microwave 10 more minutes. 

Remove from water (they'll be hot!) and pat dry with paper towels. This is the key! Get them dry. 
Line a  baking sheet with aluminum foil and spray with cooking spray. 
Cook for 45 minutes, spread out on one layer. 
Flip all, and bake for an additional 15. 
Take wings out and let them cool 15-20 minutes as you melt together sauce and butter.
Toss wings in sauce and serve! 

Spinach Dip

Another party favorite, and a great way to get some veggies in to everyone's diet! Serve with crackers, or baked chips! 

16 oz. low-fat cottage cheese 
1 package frozen spinach (between 8-12 oz. depending on how green you want it!) 
2 Tbsp. chopped onion
1 tsp. parsley
2 tsp. minced garlic
1 tsp. salt

Blend cottage cheese in a blender until it is smooth. 
Transfer to mixing bowl and combine all other ingredients. 
Refrigerate until ready to serve. 

Chili Pepper Poppers

These were a hit at my last event, so I'll be making them again. Tomorrow I'm making the chili for dinner, so it will be a perfect use of my leftovers!

Pizza Bites

This will be an experiment for me, and I'm excited to try this recipe that I found for these pizza bites. They look delicious, and are gluten free, so I'm going to be fearless and go for it!

As said before, some of these recipes I've tried and some I haven't. Most aren't 100% clean or perfect, but are a step up and really, thats all anyone can ask for! I hope you'll join me in making a healthy dish for your friends or family this weekend!
