Salsa Chicken - great for LUNCH

Well folks, lunches are a challenge.

What do you eat, if not for a sandwich...or straight up spinach salad?

A girl needs some VARIETY!

This salsa chicken is a great way to mix things up! It is easy to make, and stores great in the fridge so you can make a big batch and eat it throughout the week.

2-3 chicken breasts 
1 colored pepper (I used green) 
1/2 yellow onion
2 tsp coconut oil 
1 jar organic salsa 
1 tsp cumin 
Slice pepper and onion. 
Saute in skillet with coconut oil until tender
Remove from oil and set aside
Add cut up chicken breast and cook thoroughly
Once chicken is cooked, add onions, peppers, salsa and cumin and stir together. 
Cook for 5-10 minutes to let spices mingle. 

This dish is great warm or cold. It's also a great addition to a salad for a heartier meal, or can be used for tacos if wrapped in lettuce. Versatile and satisfying -- we definitely loved it at our place!
