I have a confession.

I have a confession.

I never have actually eaten at Chipotle.

I know, I know. 

The thing is, when it opened it gained popularity so fast that my personality was instantly against the "fad" of Chipotle. I do the same thing with popular books, movies, and TV shows. I just feel the need to go against the grain, I guess. #rebelwithoutacause.

So last month I had a retreat, and the food provided was from Chipotle. I had to put my rebel needs aside to feed myself. It was my only option.

Now, sometimes when my hand is forced I'm annoyed. In this case though, I was elated. We had the burrito bowls and seriously -- O. M. G. It's something I never would have ordered for myself so I was pleasantly surprised as I scarfed down the burrito bowl.

I've been trying to re-create this simple masterpiece since and I've finally struck gold. This is an excellent option for lunch because it can be made ahead of time and is easily stored for work or an outing. Plus, of course, its filling and perfect for a meal that will keep you energized for the rest of the afternoon.

So, here is what I did:
For the salad:
1/2 C. brown rice
1/2 C. organice salsa
1 1/2 C. lettuce (I mix spinach and romaine)
1 can drained corn
1 can drained and rinsed black beans
1 diced avocado
1 Tbsp. chopped cilantro

For the sauce:
1/2 C. plain greek yogurt
1 tsp. chipotle paste
2 cloves chopped garlic
1/2 tsp. salt

Combine ingredients for sauce and refrigerate.

Cook rice according to package instructions. Then, add cooked rice to remaining salad ingredients. Top with dressing and voila! Simple. Delicious. Healthy. Filling.

Now, as you can see this does not include any MEAT. Obviously grilling the meat is an easy step to do ahead. Feel free to marinate meet in any form of southwest seasonings or simply add them to the meat before you grill!

Also feel free to experiment with this. Add tomatoes and peppers to beef up the vegetable ratio -- and if you're wanting a little treat throw in some cheese or a little sour cream! This bowl definitely doesn't need any of those "treats" to be delicious though!
